- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable broth
- 1 cup cooked white rice
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 teaspoon sugar
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté chopped onion for 3–4 minutes until translucent, then add garlic and cook for another minute.
- Pour in crushed tomatoes and vegetable broth.
- Stir in dried basil, salt, pepper, and sugar.
- Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.
- Stir in the cooked rice and heat through for another 5 minutes.
- Adjust seasoning if needed, then serve hot with fresh parsley garnish.
