- 1 lb. boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup uncooked pasta (e.g., rotini or penne)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Sauté the chicken: In a large pot, heat the olive oil over medium heat. Add the chicken pieces and sauté until browned, about 5-7 minutes. Remove the chicken and set it aside.
- Cook the vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are soft. Then, add the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring it to a boil.
- Once boiling, add the uncooked pasta and dried thyme and oregano. Reduce the heat and let it simmer for about 10 minutes or until the pasta is cooked al dente.
- Stir in the heavy cream and the cooked chicken. Allow it to heat through for about 5 minutes.
- Taste and adjust the seasoning with salt and pepper as needed.
- Remove from heat. Serve hot, garnished with fresh parsley.

- You can use any type of pasta you prefer.
